The La Lagunilla is a cooperative located in southern Mexico in the small town of Cacalotepec. Many farmers migrated out of Cacalotepec in the early 2000’s, largely due to the highly volatile coffee market of that time. The La Lagunilla cooperative formed in 2003 in an effort to bring coffee back to Cacalotepec as a viable economy. With a focus on organic cultivation and the ultimate goal of obtaining organic certification, this cooperative is made up of 40 different producers, many from the Zapotec community. Using ‘traditional’ hand-cranked devices, the coffee produced from this cooperative is de-pupled and then fermented overnight, washed, and dried on mats - producing a bright, fruit-forward, yet nutty coffee.
